Right, to start with. I'll explain the easier of the two, The quick scope. Basicaly the Quick scope is at is says, a quick scope.
Too perform a quick scope, make sure you have your sniper set. Just quikly go into scope and before your fully into scope shoot. This usually works depending on the correct timing, too soon and the shot goes off course and too late it's just a normal scope. The reason the quik scope works is because as you go into scope your crosshairs begin to come together making the shot more accurate. The quick scope should only really be used at close range when scoping isn't an option and you can't switch to your pistol.
The next shot is called the G-shot, this is bassicaly shooting from the hip. But there's more too it. To do a g-shot it takes precision timing and probably luck. When you strafe to the left and right or back and forward you'll notice your crosshairs move out. If you strafe and then stop, then the second the crosshairs come together you shoot. your shot should shoot straight. Pretty usefull for close range if you can do it, also good for showing off if your good enough to do this technique at range. Oh, you need to have stopping power and steady aim! I prefere to use the M40A3 with acog to do this, but all snipers can be used.
